But yes, folks. I am feeling quite fine! So everyone can calm down for a second, because I did make another cake (ahahaha) but it is not the star of this post.
Today’s star is a cookie!
I received the Thomas Keller Bouchon Bakery cookbook a few weeks back and almost shat my pants when it arrived. It’s beautiful. It’s breathtaking. It’s everything I thought it would be and more! These cookies are the first thing I’ve made from it, and they do not disappoint in any way. Actually, they’re about a bajillion times better than I thought they would be.
Since I live in Canada, I’ve never been to any of the bakeries in the US and so I had no idea what to expect from these little cuties. So let me just say OH MY GOD ARE THEY GOOD. Am I exaggerating? Maybe a tiny bit…but they are super fantastic. The cookie is super crispy and delicate and melts in your mouth. The cream filling (even though I overmixed mine so it totally separated a little bit) is really just perfect.
Now, I’m going to disappoint you here. I am not going to include the recipe because sweet mother of jesus there are a lot of important little steps to these cookies and I am waaaaaay too lazy to type it all out (and plus you should really really really buy the book because it’s fantastic and I promise you will love it!). I am the worst blogger ever! I admit it. But you can find a recipe here.
I want to make these with a peppermint filling for Christmas 😀
