Chocolate Espresso Cupcakes

Made some cupcakes. Simple cupcakes. Martha Stewart’s one bowl chocolate cupcake to be exact. I’ve never made it before and saw it on a blog and they look pretty awesome. So I made them. Because I’m impulsive like that. I happened to have some buttermilk but no safflower oil so I just used vegetable oil. Things turned out swell, just swell. I made some espresso buttercream to go on top because I’ve been going through a chocolate/coffee phase lately.

It accidentally is the best buttercream I’ve ever made. It’s a canadian style buttercream, made with icing sugar and butter. And espresso powder. And water. That’s it. I just threw random amounts in and whipped it until it looked good. Oh so good. The cupcakes themselves have kind of a baking soda-y taste if you know what I mean, but they’re still pretty good. Really light and fluffy and chocolatey.

    • I whipped maybe like 1 cup of really soft butter with 2 cups of icing sugar (or however much it takes to come together) and then added 1 tbsp espresso powder, a tbsp of cocoa for colour and a few splashes of water to thin it out since I didn’t have milk. I was surprised at how well it actually turned out! I hardly ever use recipes for frostings or icings haha. I seem to be lucky that they work out!

    I would just like you to know that when Facebook automatically updated about your blog, it put in certain “merkenlots” type things. Go look and I’m sure you’ll see what I mean. It made me laugh though and I’m sure I’ll still suffer through one tomorrow.
