Sup Homies.
Today I decided I would make some espresso white chocolate cookies. In my head everything was going to go perfectly, and they would turn out like awesome delicious cookies.
And even though my day had been going quite perfectly, these cookies didn’t turn out quite right. I don’t know what happened with my cookie dough, I measured everything exactly but it was so dry. So so dry. The cookies still look pretty decent and taste awesome, but I’ll just have to make them again soon and see if the same thing happens.
also I’m out of vanilla but this is a secret. that’s why this is secret text haha. SNEAKY!
stupid lack of vanilla. I’m convinced that this is what made my batter dry. A whole two teaspoons….okay, so maybe it’s not the lack of vanilla..haha.
These cookies are really awesome actually. I got the recipe from Joy the Baker. Do you like coffee? I like coffee. And you must like cookies because everyone likes cookies. So if you like coffee, and you like cookies, it’s obvious that you will like these cookies. They aren’t super over-powering with coffee, and the white chocolate adds a nice sweetness that makes me happy.
I like these cookies. You should like them too.
Espresso White Chocolate Cookies
1 cup of butter, softened
3/4 cup of brown sugar
3/4 cup white sugar
1 egg
1 egg yolk
2 teaspoons of vanilla extract
2 1/4 cups of all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
3 tablespoons of espresso powder or instant coffee powder
1 cup of white chocolate chunks or chips
In a bowl combine the flour, salt, baking soda, espresso powder and chocolate chunks. In another bowl cream the butter and sugars until light and fluffy. Add the egg and yolk and vanilla. Add all of the flour mixture and beat just until combined. Cover the dough and refrigerate for 45 minutes.
Preheat your oven to 350C and scoop cookies by the heaping tablespoon onto a parchment or silpat lined baking tray. Bake the cookies for about 12 minutes until they look golden brown around the edges. Allow the cookies to cool and enjoy with a nice cold glass of milk.
Yum! White chocolate and coffee is a combo that is all too often ignored.
