A Good Sunday Night

Cookies. Beer. Goosebumps.

Even though I’m super tired and definitely could have fallen asleep at 7pm tonight, I decided to make cookies. I made cowboy cookies. You know, the ones with oatmeal and coconut and chocolate chips and pecans in them? Ya, those cookies. So good. And this recipe makes me happy because you can literally just dump everything in a bowl and mix it together. None of that “cream the butter and sugar first”  or “don’t overmix it or you’ll end up with cakey cookies!” business**. These are not serious businessman cookies. These are more like laid back joblessman cookies. Laid back joblessman soft chewy cookies. Yes I just made up that word, joblessman. I like it. I’ve never had cookies and beer together, but these ones seem to go together fairly well, or maybe I’m just disgusting. They both seemed to also go well with Goosebumps. Good show, I like it okay. Don’t judge me.

Cowboy Cookies

1 1/3 cups of oatmeal
1/2 cup packed brown sugar
1/2 cup white sugar
1 cup of chocolate chips
1 cup of coconut
1/2 cup chopped pecans
1 1/3 cups flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
3/4 cup melted butter
1 egg
vanilla

Preheat your oven to 350 degrees! Put everything in a bowl except for the butter, egg and vanilla. Slightly mix it together. Dump in the egg, butter and vanilla. Mix until it all comes together. It will seem loose but hold if you pack it together. Shape into slightly flattened balls and place on your cookie sheet. They don’t spread out too much. Bake them for about 6-8 minutes and take them out when they look slightly browned on top. Eat those cookies!

 

**I’m not prejudiced against other cookies, I swear. I enjoy delicate cookie doughs that can’t be overmixed because they produce such awesome textured cookies.I love all cookies equally…unless they have raisins in them. Then they are disgusting and yes I judge them.

By the way, I got a new job at a bakery! A really cool place called Art Is In Bakery. Look them up, and if you’re in Ottawa you should go check them out!  Yay waking up at 4am every day!

  1. i think you should omit the pecans as nuts are gross and add smarties and peanut butter, then call them monster cookies. i quite enjoy them. on a side note what the hell kind of beer is that!

    • Nooooooo sam I love pecans! And smarties? ew! m&m’s are a million times better even though they both just generally taste like cardboard and plastic MMMMMMMM. also the beer is called Hoptical Illusion made by the Flying Monkey brewery in Barrie. It’s pretty tasty but super strong on the hops taste. Hence the name….

  2. ARGH! I just yelled out to my boyfriend, ‘I love this girl’. Seriously. Cookies + beer = YESSSS.

    P.S. What sort of coconut do you use? Shredded, dessicated..?

    • Cookies + beer are a combination I didn’t think would go well together. BUT IT WORKS! Also I used dessicated coconut just cause it’s what I had on hand. The cookie dough is so loose though that I think it probably would work best with dessicated and shredded or whatnot might be too loose.
